Grilled Garlic Parmesan Potatoes

We are almost halfway through September, and the temperatures have not started to drop yet here in Florida. Although I enjoy the hot summer temperatures, I am looking forward to cooler nights for sleeping. We are still grilling our meals frequently, though, as who wants to spend hours in the kitchen on a hot day? I’ll be heading to Italy for a few weeks in another month and am already counting down the days.

When we fire up the grill for dinner, I like to cook everything on the grill, including my vegetable sides. I often grill potatoes as a side dish for meat or seafood, one of my favorite ways to prepare them. You can buy baby Yukon Gold, Fingerling potatoes, or full-size potatoes and cut them into small pieces for this dish.

Grilled Garlic Parmesan Potatoes

Grilled Garlic Parmesan Potatoes

Yield: Serves 4
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

These potatoes are tossed in garlic, olive oil, and herbs and are then wrapped in foil packages before grilling.

Ingredients

  • 2 Pounds Yellow Potatoes (Either Baby or Full Size Cut Into 1 1/2-inch Pieces)
  • 3 Tablespoons Olive Oil
  • 3 Garlic Cloves, Minced
  • 1 Tablespoon Italian Seasoning
  • Salt & Pepper To Taste
  • 1/3 Cup Grated Parmesan Cheese
  • 4 Tablespoons Finely Chopped Fresh Parsley

Instructions

  1. Preheat grill to medium high heat.
  2. Cut baby potatoes in half, or cut full sized potatoes into 1 1/2-inches.
  3. Place potatoes, olive oil, garlic, Italian seasoning, salt and pepper and toss well.
  4. Divide the potatoes between 5 sheets heavy duty aluminum foil.
  5. Fold the sides over and enclose to create packages.
  6. Place foil packs on grill, and cook 20 to 25 minutes turning halfway. Cook until potatoes are tender when pierced with a knife.
  7. Open packages, dump into a bowl and sprinkle with grated Parmesan cheese and parsley.
  8. Serve hot and enjoy!
